Welcome back to day two of the Anti-Cooking Series!
You can find today's recipe for Mango Ceviche on Jaybird Blog - and friends, "anti-cooking" just went to a whole new level! Everything about ceviche is fresh because fresh ingredients make this recipe. On top of that, it's an idea for a whole meal that will satisfy you without a laundry list of ingredients, or an ounce of cooking time. I feel like it would also be a great contribution to a summer potluck or BBQ.
I'm a sucker for all of the ingredients in this recipe and I've never attempted a ceviche of any sort (let alone mango!), so I'm really looking forward to trying this recipe out as well.
