Well, there was bound to be one week when things got a little bit behind. As in I managed to get behind on just about everything in life last week and then further throughout the weekend.
And so I'll be the first to admit that today's breakfast posting is a bit sad. That being said, the whole point of this series was to force myself to eat breakfast, and today I'm eating breakfast, it just doesn't look all that fancy.
Last week I was at Bridgehead and none of the salads were really calling my name, and I had already had some of their wonderful loaf that morning (me and loaf; you know I can't say no) so I opted for the cheese and protein plate; a delightful little concoction of cheese and nuts and dried fruit.
It was such a good combination, I promptly searched for and made this recipe for curried almonds.
The best thing about this little nutty endeavor was it took about 3 minutes of prep time
Badda bing, badda boom, Lunchables by Emily:
When I first met mike, one of the original things that made him point out my "bird-ness" was when during an email exchange I told him I had "nuts and berries" for breakfast. He seemed to think this was funny. But funny boy has an identical breakfast box in his lunch this AM, so I ask you, who's laughing now?
I told you it wasn't pretty, but it's what's for breakfast :)
Happy Monday Folks!
